Creamy Boscaiola

Ingredients

500g pasta
6 bacon slices
200g button mushrooms
625ml cream
2 spring onions (optional. I've made it without and is still delicious)


Method

1. Cook the pasta in a large saucepan of boiling salted water until al dente. Drain well then return to pan to keep warm.

2. While the pasta is cooking heat oil in a large frying pan add the bacon and mushroom (both sliced) and cook until golden brown.

3. Stir in a little of the cream and scrap the bottom of the pan with a wooden spoon to dislodge any stuck bacon.

4. Add the remaining cream, bring to the boil and cook for a further 15 minutes or until sauce thickens. Stir in spring onions (if using them)

5. Poor sauce over pasta ans serve!
